Banana Bread French Toast with Grilled Pineapple & Maple Walnut Syrup

Juicy grilled pineapple and rich maple walnut syrup are a perfect finish for this delightful twist on French toast made entirely on your grill.

3/4 cup corn syrup
1/2 cup maple syrup
1/4 cup sugar
1/4 cup water
1 cup walnuts, chopped

8 rings fresh pineapple, peeled, cored, and sliced 1/2 inch thick
4 large eggs
1 cup half & half
1 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
Pinch salt
8 slices banana bread, sliced 3/4 inch thick
Powdered sugar for garnishing (optional)

The syrup
Bring the corn syrup, maple syrup, sugar and water to a boil in a saucepan. Reduce heat to low. Simmer until syrup begins to thicken (15 minutes). Stir in nuts and cook an additional 5 minutes. Remove from heat and keep warm until ready to serve.

The French toast
Preheat your grill to medium-high. Grill the pineapple until well browned on both sides. Remove and cover with tin foil to keep warm. Meanwhile, make the custard by beating together the eggs, half & half, cinnamon, nutmeg and salt in a shallow bowl. Completely coat both sides of the banana bread with the custard and lay them on the grill. Cook until golden brown on both sides.

To serve
Lay 2 pieces of banana bread on a plate, top with two slices of pineapple and drizzle with syrup. Dust with powdered sugar or garnish with fresh mint for color
